Salty, Chocolatey, Protein Packed Goodness

Hi Friends!

So I spent the day yesterday recipe testing & getting shit done.  It was a nice way to being my week. Seriously, there is something to be said about getting shit done & feeling well rested by the end of your Sunday. On top of that, one of my biggest downfalls/greatest strengths is I love to do list and I love crossing things off my to do lists even more. So yesterday was extra satisfying.  Throw in brunch, a massage, an outdoor workout & some quiet time before bed= Happy Kerry.  

Since it's been a while since I have been able to escape to the outdoors (and god, are the mountains and ocean calling my name), I have been trying to find the joy in the little things.  It's a simple practice that I do every morning- write down 3-4 things that I am grateful for and/or looking forward to.  Some days the practice is really easy, other days it is not.  Usually, I repeat some things everyday which I don't think is a bad thing.  But, I have started to challenge myself to write one new thing that I am grateful for that is unique to that day in particular-- harder than I thought! Anyone do this? Any tips on how to appreciate the little things?

Anywhoooo, on to the goodness that are these protein balls. Seriously, so freaking good.  I tweaked an old recipe that I have been making for a while & boosted it with some superfoods.

 

Pretzel Almond Butter Protein Balls

Ingredients:

3 cups of pretzels (any kind!)

1 cup of coconut flakes

1/2 cup of chia seeds

1/2 cup of protein powder

1 tablespoon of flaxseed meal

1 tablespoon of AukaLife recovery blend

1 scoop of collage peptides

1/2 cup of chocolate chips

1/2 cup of almond butter

1/2 cup of coconut oil

1/2 cup of local honey

How to:

1. Place 3 cups of pretzels in food processor or blender and grind until pretzels are chopped up-- I still leave some larger pieces

2. Place the rest of the ingredients in a bowl together and mix

4. Make into balls of any size. This makes a good amount
