I was recently inspired by my coworker to make my own guacamole. We were talking about healthy fats and pondering what else I could dips my carrots and cucumbers in besides hummus and veggie dip(my weakness) I had a few avocados sitting on my counter almost going bad so I decided to give it a try now. I've made two batches after becoming completely obsessed with my homemade guacamole after the first batch. I tried using a food processor and my ninja blender but in the end chopping and mashing the avocados by hand worked best.
- 2-3 jalapeno peppers (no seeds)
- half a red onion finely diced
- dash of salt
- lime juice
- dash of red pepper flakes
Mash up the avocados. Finely chop the jalapeno peppers and red onions. Add salt, lime juice and red pepper flakes to taste. Enjoy!!
This might turn into a weekly thing for me. I love bringing pretzels, carrots and cucumbers to work and it's the perfect healthy fat to accompany them. I don't always have full sit down meals at work so it's nice to snack on something healthy and delicious.
Anyone else have good healthy fats to share? what other ingredients do you add to your guacamole?
