Peanut Butter Banana Balls
Okay guys, so I am on a roll with these new recipes. When we went up to Acadia the other weekend and we needed to pack some snacks that would be filling, not too messy and wouldn't freeze. In comes: More protein balls. These guys have lots of protein, carbohydrates and a ton of goodness to full your adventure of choice-- whatever that is. I chose some of my favorite flavors and gave it a whirl. good news is they were a hit!
Also, the bananas were going bad and I hate wasting food. win win for everyone! These are delicious. They are peanut butter banana balls with an almond cinnamon coating. ohh yeahhhhh.
Here is the recipe:
- 1 cup of oats
- 1/3 cup of coconut flakes
1 scoop chocolate protein powder
1/3 cup of chocolate chips
1 teaspoon of vanilla
1/3 cup of peanut butter (I used chunky!)
1/4 cup of chia seeds
- a pinch of salt
Throw everything into a ball and mash it up. Make sure the bananas are completely mashed up. I ended up adding a few more chocolate chips and a small spoonful of oats to get the perfect consistency for me. Play with it a little and see how the consistency comes out for you. This isn't one of those recipes where you have to follow it to the exact number for fear of ruining it. (These recipes are also helping release my perfectionist mindset and I am loving it.)
1/3 cup of raw almonds
1/2 teaspoon of cinnamon
Throw almonds and cinnamon in a blender or food processor blend until it is a fine mixture.
Make balls of about a spoonful and roll into the outside layer. This makes about 14 depending on the size you make them.
Similar to my last recipe these are great snacks for on the go. I add them in as a part of my breakfast or I bring them to school as an afternoon snack or I eat one quick before my workout. They are sweet snacks that satisfy my cravings and fuel me for a action packed day. On top of that, they are a lot of fun to make and super EASY.
