The Best Energy Ball Recipe

Hi all! Happy Monday! Living in #PatsNation I am very happy that my classmates, professors, the guy driving done the street got a big win last night because otherwise this would have been an extra tough Monday for the city of Boston.  But, in typical Pats fashion they pulled through with a big, dare I say history making, win.  Seriously, there is something to be said about perseverance and never giving up. (I feel a blog post coming on this......)

As promised I am here to share with you my latest creation.  Being creative in the kitchen is not really my creative outlet, but the other week I was feeling particularly motivated to make something delicious and healthy.  I am usually the type of person that follows recipes to a T and then think its creative when I add a dash of an extra spice (usually turmeric or red pepper flakes, damn I am so predictable).  Lately, I have been taking a page out of the boyfriends book and just going with the flow of what I think would taste great together.  And because of this we have.... Power Protein Balls... I am seriously obsessed and have made 3 (soon to be 4) batches already).

Power Protein Balls

Here are the ingredients:

  • 1 cup dry oats
  • 1/2 cup almond butter
  • 2 tablspoon chia seeds
  • 2 tablespoons honey
  • 1/2 cup cashews (I have been using Maca Cashews)
  • 1 teaspoon vanilla
  • 2  tablespoon collagen peptides
  • 1/2 scoop chocolate protein powder (my go to is Vega!)
  • 1 tablespoon of cacao nibs
  • If I am feeling indulgent/ when they are in the house... 1/4 cup of semi sweet chocolate chips
  • A splash of almond milk (for better consistency


The best part about the recipe is it doesn't have to be perfect. Just throw it in a bowl, mush it together, roll into some balls and you are good to go.  The perfect blend of tasty and healthy, protein and carbs. For me, this is the perfect midday pick me up during class and it satisfies my sweet tooth that rears its head every now and then without leading me to gorge on chocolate bars. (may or may not have happened this weekend. some days chocolate is just my weakness!)
